1 hrsThis is the kind of cake your aunt brings to every family gathering, and everyone always asks for the recipe.
Mashed bananas and crushed pineapple (juice and all) keep this tube cake incredibly moist. Cinnamon and vanilla round out the flavor, and the method could not be simpler: stir the dry ingredients, add the wet, blend by hand without beating, and pour into a tube pan.
No mixer, no creaming butter, no separating eggs. It bakes low and slow for about an hour and twenty minutes, then cools right in the pan.
Kitchen Tips
- Blend gently. The recipe specifically says not to beat. Overmixing develops gluten and makes the cake tough
- Check at one hour. Oven temps vary and this cake can go from moist to dry if overbaked
- Cool completely in the pan before attempting to remove. This cake is tender and fragile while warm
- No frosting needed. The crushed pineapple keeps the crumb so moist it’s satisfying on its own
