This quick bread gets its moisture from three sources, none of which is butter or oil: mashed banana, chopped fresh apples, and applesauce. That combination keeps the crumb tender without the added fat, making this a noticeably lighter loaf than most banana breads.

The technique is classic quick bread: wet ingredients in one bowl, dry in another, combined just until moistened. Stop there. Stirring beyond that point develops gluten and gives you a tough, dense loaf instead of a soft crumb.

Both brown sugar and white sugar go in, and that matters. Brown sugar adds a molasses depth that pairs well with the cinnamon and fruit. The applesauce should be at room temperature before mixing so it doesn’t cool the batter and slow the rise.

Kitchen Tips

  • “Just until moistened” means stop when you no longer see dry flour streaks. A few lumps in the batter are fine and expected.
  • Bake time varies by pan size. A standard 9×5 loaf takes about 60 minutes; smaller pans or muffin tins need considerably less.
  • Test doneness with a toothpick in the center. Clean or a few moist crumbs means done; wet batter means it needs more time.
  • Cool at least 15 minutes in the pan before turning out. The structure sets as it cools.

Variations

  • Add ½ cup chopped walnuts or pecans for texture contrast.
  • A teaspoon of nutmeg alongside the cinnamon adds warm spice depth.
  • Bake as muffins for about 20 to 25 minutes at the same temperature.

Directions

Preheat oven at 350. Prepare a pan(s) with cooking spray and flour.

In a mixing bowl, combine applesauce, egg whites, sour cream, bananas, vanilla, and apples. In another mixing bowl, combine flour, sugars, baking powder, baking soda, and cinnamon. Mix wet ingredients with dry ingredients just until moistened.

Pour into prepared pan(s). Bake about 1 hour depending on pan size.
