This is a vintage American sandwich straight out of the Depression-era cookbook playbook, a quick savory-sweet build that pre-dates the Elvis peanut-butter-banana-bacon by decades. The combination sounds odd until you bite into it: salty, smoky bacon, creamy crushed banana, tart minced apple, and a crisp lettuce leaf on buttered bread. The contrasts work.

The technique is barely a technique. Cook the bacon till crisp, drain it well, then chop fine. Mash the banana coarsely (lumps are fine, they keep texture), mince the apple very small to prevent big crunchy chunks, and stir everything with a pinch of salt. Spread thick on buttered bread, lettuce on top, close it up.

Eat it within an hour or so, since the banana browns fast once it’s crushed. This sandwich was a brown-bag lunch staple in the 1930s and 1940s American South, and there’s a reason: it uses up overripe bananas, leftover bacon, and a single apple to feed the family for almost no money.

Kitchen Tips

  • Bake or pan-fry the bacon till genuinely crisp. Limp bacon disappears into the banana and you lose the crunch contrast.
  • A squeeze of lemon juice over the apple stops it from browning if you’re prepping ahead.
  • Use soft white sandwich bread for the most authentic vintage take, or sub whole-wheat for fiber.
  • Toast the bread lightly if you want more structure to hold up to the soft filling.
