80 minMost banana bread recipes rely on butter or oil for moisture. This one uses applesauce instead, and the result is a dense, hearty loaf that gets its richness entirely from ripe bananas and fruit puree. No added fat in the batter at all.
The whole wheat flour adds a nutty backbone and more fiber than all-purpose, which fits the lean profile of the recipe. The banana-applesauce combination keeps the crumb tender despite the heavier flour that would typically make a denser, drier loaf.
The technique adds banana and flour alternately into the applesauce mixture rather than the more typical dump-everything-together method. That gradual incorporation prevents the batter from getting lumpy or over-developed.
Cool the loaf in the pan a full 10 minutes before turning it out. The structure needs time to firm up, especially with a lower-fat crumb that’s more delicate than a butter-based loaf.

- Use very ripe bananas - the browner the better. More sugar, more flavor, and more natural moisture for a loaf with no added fat.
- Alternate the flour and banana additions in two or three additions each, not all at once. This is what keeps the batter smooth.

In mixing bowl, stir together flour, baking powder, baking soda. In another bowl, combine sugar and applesauce; add egg whites and milk, beating until smooth. Add flour mixture alternately with bananas to applesauce mixture.
Bake in Pam-sprayed 9×5×4-inch loaf tin for 60 minutes at 350℉ (180℃). (If desired, bake in smaller pans for less time.) Cool in pan 10 minutes. Remove from pan; place on wire rack.
