Mix sugar and softened butter in a large bowl, stir in eggs until smooth, then add mashed bananas and a splash of water.
The batter comes together fast—beat for just 30 seconds, then stir in flour, baking soda, salt, and baking powder until barely moistened.
Fold in chopped nuts and pour into a greased loaf pan.
Bake at 350°F for 55-75 minutes depending on pan size, cool for 5 minutes, then turn out onto a rack.
The hardest part is waiting—the flavor and texture genuinely improve after sitting overnight.
Pro Tips
- Use very ripe bananas that are soft and heavily speckled for maximum flavor and natural sweetness
- Grease only the bottom of the pan so the sides can grip as the loaf rises
- Cool completely and wrap for 12 hours before slicing for the best texture
