Fifteen minutes and a microwave. That’s all that stands between you and a warm, caramelized tropical dessert.

Bananas get coated in melted butter, then smothered with a mixture of fresh orange juice, diced orange pieces, and brown sugar.

A few minutes in the microwave softens everything into a glossy, sticky glaze that clings to each banana quarter.

A handful of shredded coconut on top adds a toasty crunch that pulls the whole thing together.

Variations

  • Toast the coconut in a dry pan before sprinkling for extra nutty flavor and crunch.
  • Add a splash of dark rum to the orange juice mixture for a boozy take on bananas Foster.

Directions

  1. Melt butter or margarine in a shallow, heat-resistant, non- metallic baking dish in Microwave Oven 30 seconds.

  2. Place bananas in baking dish and coat well with butter or mar garine.

  3. In a small bowl, combine the orange juice and pieces and brown sugar until well blended.

Spoon over bananas.

  1. Heat, uncovered, in Microwave Oven 4 minutes or until bananas are soft and glazed.

  2. Just before serving, sprinkle with coconut.

Serve either hot or cold.
