Ingredients

1 cup sugar
1/4 cup butter melted
2 large eggs beaten
3 tablespoons amaretto liquer
2 tablespoons honey
1 teaspoon vanilla extract
2 cups cereal almond delight, crushed to one cup
1/2 cup cocoa powder unsweetened
1/2 cup coconut flakes
1/2 cup powdered sugar

Directions

Preheat oven to 350 degrees.

In a medium bowl, beat sugar and butter.

Add eggs, amaretto, honey and vanilla extract, stirring until well combined.

Stir in cereal, cocoa and coconut.

Pour into an ungreased 2-quart casserole and bake for 30 minutes.

Remove from oven and stir immediately until well blended.

Let cool to room temperature.

Shape level tablespoons of mixture into 1 1/2-inch balls.

Roll each ball in powdered sugar.

Store in an airtight container.
