A succulent shrimp dish that doesn't take a whole lot to make or eat!

Ingredients

8 large shrimp
4 tablespoons lemon juice
1/2 cup butter
1/2 cup parsley leaves chopped
3 each garlic cloves minced
1 cup bread crumbs
2 teaspoons paprika

Directions

Butterfly shrimp but don't cut all the way. Spread and flatten. Place shrimps in individual baking dishes. Sprinkle with portion of lemon juice. Combine butter, 5 tb. parsley and garlic in a bowl. Place some of the mixture on each shrimp. Combine crumbs, remaining parsley and paprika and place some on each shrimp.

Bake at 400 degrees for 15 minutes. Garnish with lemon wedges.

Favorite Banana Bread

I was looking for new banana bread recipes and this one caught my eye. The orange zest seemed like a nice touch. I modified it somewhat by starting with the wet ingredients and then adding the dry (which I didn't bother to sift). I also added 1 tsp. of vanilla and 3/4 cup coarsely chopped walnuts. I sprayed the pan with cooking spray and coated it with a fine layer of sugar. I'm eating a slice now, warm from the oven, and it is fantastic. Moist, not too heavy, with a wonderful flavor. I laughed at the yield of three servings, but I know I could easily eat a third of a loaf!
