Ingredients

2 cups pasta, elbow macaroni
1 x nonstick cooking spray
16 ounces cottage cheese (low-fat 1%)
2 tablespoons flour, all-purpose
2 cups milk, skim
4 ounces cheddar cheese, very old, sharp grated
1 teaspoon salt
1/4 teaspoon black pepper ground
1/4 teaspoon nutmeg ground
1/4 cup parmesan, parmigiano-reggiano cheese, grated fresh, grated

Directions

Prepare macaroni according to pacakge directions; drain.

Preheat oven to 375 degrees, spray shallow broiler safe 2 1/2 quart casserole with non stick cooking spray.

Meanwhile, if food processor with knife blade attached, blend cottage cheese until smooth.

In a 2 quart saucepan, mix flour with 1/4 cup milk until smooth.

Slowly stir in remaining milk until blended.

Cook over medium heat, stirring frequently un til mixture just boils and thickens slightly.

Remove from heat, stir in cottage cheese, cheddar cheese, salt, pepper and nutmeg.

Place macaroni in casserole; cover with cheese sauce.

Bake uncovered for 20 minutes.

Remove casserole from oven.

Turn oven control to broil, sprinkle with parmesan cheese and serve.
