Baked Lemon Shrimp with Garlic

thoroughly enjoyed this recipe. I found it very easy to prepare. I served this recipe with angel hair pasta and it has become a favorite.

Ingredients

2 pound shrimp large, peeled
1 cup butter, unsalted
1 x salt to taste
1 x garlic minced
1/2 cup parsley leaves flat-leafed, washed well, spun dry, and chopped fine
2 tablespoons lemon zest freshly grated
1 x lemon juice fresh, to taste
Accompaniments:
1 x rice, cooked as needed
1 x lemon wedges

Directions

Preheat oven to 450°F.

In a flameproof baking dish large enough to hold shrimp in one layer melt butter with salt over moderately low heat.

Stir in garlic and half of parsley.

Add shrimp and bake 5 minutes.

Turn shrimp and sprinkle with remaining parsley, zest, and lemon juice.

Bake shrimp until just cooked through, 5 to 10 minutes more.

Serve shrimp with rice and lemon wedges.
