Baked Cheese Toastwishes

Half French toast, half grilled cheese: egg-dipped toast layered with melted American cheese and baked golden. A quick, cozy lunch or diabetic-friendly main in 30 minutes.

30 minCan’t decide between French toast and a grilled cheese? Make both at the same time.
Bread gets toasted on one side, then quickly dipped in a seasoned egg-and-milk mixture just like you’d do for French toast. Two slices go toasted-side-down in a baking pan, each topped with a slice of American cheese, then the other two slices go on top, toasted-side-up, with more cheese on the crown.
Into a hot oven for 10 to 12 minutes, and out comes something crispy on the outside, eggy and custardy in the middle, with melted cheese oozing through every layer.
It’s the kind of thing that makes you wonder why this isn’t on every diner menu.
Kitchen Tips
- Dip the bread quickly. You want it coated, not soaked through, or the center will be soggy.
- Use whatever bread you like: white, whole wheat, sourdough, or rye all work well here.
- A dash of hot sauce or a smear of mustard between the layers takes this from simple to memorable.

Preheat oven to 400℉ (200℃). Prepare shallow pan with vegetables pan-coating. Toast bread on one side only. Combine beaten egg, milk, salt, and paprika; mix well and pour into a pie plate. Dip bread in this mixture quickly until all is absorbed.
Place 2 slices bread toasted side down in preapared pan and cover each with 1 slice cheese. Place remaining 2 slices bread toasted side up on top, then cover with remaining 2 slices cheese. Bake 10 to 12 minutes.
