30 minBaked bananas sit somewhere between side dish and dessert, and that’s exactly what makes them worth knowing. Split lengthwise and laid cut-side down in a buttered dish, they get brushed with fresh lemon juice, dusted with lemon zest, and finished with a coating of packed brown sugar and melted butter.
The lemon is the key player here. It brightens the sweetness of the banana and keeps the edges from going cloying. After just 15-20 minutes in the oven, the cut side caramelizes slightly where it contacts the dish, and the flesh softens to something almost custardy.
Use firm bananas for this. Overripe ones will collapse and turn mushy in the heat. Firm bananas hold their shape and still soften perfectly.
Serve them alongside roasted pork or chicken for a fruit-forward side dish, or go straight to dessert with a scoop of vanilla ice cream.
Chef Tips
- Use firm bananas: Ripe but not spotted. Overripe bananas will fall apart in the pan.
- Cut side down is key: This is what creates that slightly caramelized edge. Don’t flip them.
- Lemon zest adds depth: Don’t skip it — the zest adds a floral bitterness that balances the brown sugar.
- Butter the dish well: Prevents sticking and adds to the caramel effect on the bottom.
Variations
- Rum baked bananas: Add a splash of dark rum to the butter before drizzling for a Caribbean twist.
- Spiced version: A pinch of cinnamon and nutmeg in the brown sugar transforms these into something closer to bananas Foster.
