| 1/2 | teaspoon | salt | |
| 2 2/3 | cups | water | |
| 2/3 | cup | grits | hominy, quick-cooking |
| 2 | tablespoons | butter | or margarine |
| 6 | ounces | cheese | cheddar, shredded |
| 2 | large | eggs | beaten |
| 1/8 | teaspoon | black pepper |
Preheat oven to 350 degrees F (175 degrees C).
Grease a 2-quart baking dish.
Add salt to water. Bring to a full, rolling boil.
Add grits; return to boiling point. Cook, stirring constantly, until very thick, about 6 minutes.
Remove from heat. Add fat. Mix cheese, eggs, and pepper. Stir into grits. Pour into baking dish.
Bake 40 minutes or until lightly browned.
