Ingredients

1/2 teaspoon salt
2 2/3 cups water
2/3 cup grits hominy, quick-cooking
2 tablespoons butter or margarine
6 ounces cheese cheddar, shredded
2 large eggs beaten
1/8 teaspoon black pepper

Directions

Preheat oven to 350 degrees F (175 degrees C).

Grease a 2-quart baking dish.

Add salt to water. Bring to a full, rolling boil.

Add grits; return to boiling point. Cook, stirring constantly, until very thick, about 6 minutes.

Remove from heat. Add fat. Mix cheese, eggs, and pepper. Stir into grits. Pour into baking dish.

Bake 40 minutes or until lightly browned.

Calories per 2/3 cup serving: About 230
