Five ingredients and a basting brush. That’s the secret to chicken that comes out of the oven with a glossy, lacquered glaze reminiscent of Boston Market’s rotisserie style. Canola oil, honey, lime juice, and paprika get whisked together into a thin baste that gets brushed on every 8 to 10 minutes while the chicken bakes.

Each pass of the brush builds another layer of that honey-lime glaze. The honey caramelizes in the hot oven, the lime juice keeps it from being too sweet, and the paprika adds color and a faint smokiness. By the time you’ve basted four or five times, the skin is deeply golden and sticky.

The 15-minute rest under foil after baking is just as important as the cooking. It lets the juices redistribute back into the meat so every bite is moist instead of having all the juice run out onto the cutting board.

Directions

Preheat oven to 400℉ (200℃).

In a small bowl, combine canola oil, honey, lime juice and paprika.

Place chicken, skin side up, in a 7×11 inch baking dish .

Apply mixture to chicken pieces in a single layer.

Bake in over for 35 to 40 minutes, basting every 8 to 10 minutes or until well browned and juices run clear when you cut into the thickest part of chicken.

Remove from oven.

Cover with foil for 15 minutes.

This softens chicken and keeps it hot until served.
