1 hrsFour ingredients make the glaze. Canola oil, honey, lime juice, and paprika get whisked together and brushed over chicken breasts before they go into a hot oven. Basting every 8 to 10 minutes builds layer after layer of that sweet, tangy, slightly smoky coating.
The frequent basting is what makes this chicken stand out from a basic baked breast. Each coat caramelizes on the surface before the next one goes on, creating a glossy, lacquered skin that’s golden brown and slightly sticky. Without basting, you’d get a one-note coating that dries out.
Lime juice keeps the glaze from being cloying. Where lemon would blend in quietly, lime has a sharper, more tropical bite that cuts through the honey’s sweetness and the oil’s richness. Paprika adds warm color and a hint of smokiness.
The 15-minute rest under foil after baking is worth following. The chicken continues cooking gently in its own heat, the juices redistribute throughout the meat, and the surface softens just enough to be tender without losing its glaze.
Kitchen Tips
- Pat the chicken completely dry before applying the glaze. Moisture on the surface prevents browning and makes the coating slide off.
- Set a timer for basting. Every 8 to 10 minutes keeps the layers building evenly.
- Check doneness by cutting into the thickest part. Clear juices mean it’s done. Don’t rely on color alone since the honey glaze makes everything look darker.
- Use a shallow baking dish so the heat circulates around the chicken evenly.
Variations
- Add a minced garlic clove to the glaze for a savory punch.
- Swap lime for lemon and add a teaspoon of Dijon mustard for a honey-mustard version.
- Use smoked paprika instead of regular for a deeper, more barbecue-like flavor.
Ingredients
Directions
Preheat oven to 400℉ (200℃).
In a small bowl, combine canola oil, honey, lime juice and paprika.
Place chicken, skin side up, in a 7×11 inch baking dish .
Apply mixture to chicken pieces in a single layer.
Bake in over for 35 to 40 minutes, basting every 8 to 10 minutes or until well browned and juices run clear when you cut into the thickest part of chicken.
Remove from oven. Cover with foil for 15 minutes.
This softens chicken and keeps it hot until served.
