Ingredients

1 pound bacon
1 each onion chpd
8 large eggs beaten
1 pound russet potatoes peeled, grated
2 3/4 cups cheddar cheese, very old, sharp grated
1 dash black pepper

Directions

Preheat oven 350 degrees F.

Grease 9x13 inch glass baking dish.

Microwave bacon, remove.

Add onion to bacon fat, microwave; remove.

Combine eggs, potatoes, cheese, and pepper.

Crumble bacon and mix into egg mixture.

Add onions.

Pour into prepared baking dish.

Bake until center is set, 45 minutes.

Cut into squares.
