| 4 | slices | bacon | |
| 1 1/2 | cups | flour, all-purpose | |
| 2 | teaspoons | baking powder | |
| 1/4 | teaspoon | baking soda | |
| 1/2 | teaspoon | salt | |
| 1/4 | cup | sugar | |
| 1/2 | cup | cheddar cheese | shredded |
| 1 | each | egg | |
| 1/2 | cup | sourdough starter | |
| 2/3 | cup | milk | |
| 1/3 | cup | vegetable oil | or bacon drippings |
In a skillet, cook bacon over medium heat until crisp.
Reserve bacon drippings, if desired.
Drain cooked bacon on paper towels.
Crumble and set aside.
Grease 12 muffin cups or line with paper liners; set aside.
Preheat oven to 400 degrees F.
In a large bowl, sitr together flour, baking powder, baking soda, salt and sugar.
Stir in cheese; set aside.
In a medium bowl, beat egg.
Stir in sourdough starter, milk and oil or drippings.
Add to flour mixture.
Stir with fork until dry ingredients are just moistened.
Fold in crumbled bacon.
Fill prepared muffin cups 2/3 to 3/4 full with batter.
Bake in preheated oven 20 to 25 minutes or until golden brown.
Remove from muffin cups.
Serve hot.

I made this recipe yesterday so I could get rid of a bunch of leftover strawberry yogurt. I was kind of worried about how it would taste, but I was pleasantly surprised. It was really good and my husband enjoyed it as well. I left out the fruit roll-up, because I didn't have any, but it tasted great without it. (The fruit roll-up isn't listed in the ingredients, but it's listed in the directions for some reason.)
