This soup starts with bacon crisped right in the pot, then builds layers of flavor with shredded cabbage, beef broth, and a bag of frozen pasta and vegetables that does most of the work for you.
Thirty minutes from start to table, one pot to wash, and enough hearty spoonfuls to warm you through on a cold evening.
Kitchen Tips
- Crisp the bacon well before adding anything else. That rendered fat is your flavor base for the whole pot.
- Shred the cabbage coarsely so it keeps some bite after simmering. Thin shreds will turn mushy.
- Add a splash of vinegar or a squeeze of lemon at the end to brighten up the broth and cut through the richness.
