Store-bought focaccia gets loaded with crumbled crispy bacon, tangy feta cheese, chopped walnuts, and minced scallion greens, then baked just until everything gets hot and the feta starts to soften.

The combination of smoky bacon, sharp salty feta, and earthy walnut crunch on warm, pillowy bread is the kind of thing that turns a casual snack into the highlight of the meal.

Slice it into wedges for appetizers or keep it whole and tear into it with friends over drinks.

Kitchen Tips

  • Use a plain focaccia without herbs or toppings so the bacon and feta can shine. A pizza crust works in a pinch.
  • Toast the walnuts in a dry pan for a minute before sprinkling them on. It deepens their flavor and keeps them from going soft in the oven.
  • Use only the green parts of the scallion for a fresh, mild onion flavor that doesn’t overpower the other toppings.

Directions

Fry bacon in skillet until crisp.

Drain on paper towels. Crumble and arrange on focaccia.

Sprinkle with onion, walnuts and feta cheese.

Place on baking sheet.

Bake at 400 degrees until cheese melts and ingredients are hot, 6 to 10 minutes.

Serve hot.
