60 minThese apple cake bars are packed with fruit and have a hearty, wholesome chew from whole wheat flour and toasted wheat germ. Four tart apples go right into the batter along with chopped walnuts, two sugars, and warm spices, making a dense, moist cake that’s more fruit than flour.
No butter in this one. Vegetable oil keeps the crumb tender and lets the apple and cinnamon flavors come through without competing with dairy richness. The wheat germ adds a toasty, nutty undertone and some extra nutrition without making the texture gritty.
Mix everything by hand with a wooden spoon. There’s no creaming step and no mixer needed. The apples release moisture as they bake, keeping the cake incredibly moist even after it cools completely. A dusting of confectioners’ sugar on top is all the finish they need.
Kitchen Tips
- Use tart apples like Granny Smith. Sweet apples don’t hold their shape as well and can make the cake too sugary with both white and brown sugar already in the batter.
- Stir gently. Overmixing whole wheat batter develops gluten and makes the cake tough instead of tender.
- The cake is done when it pulls away from the sides of the pan. A toothpick test works too, but expect it to come out slightly moist from the apple chunks.
- Let it cool completely in the pan before cutting. Warm bars crumble apart.

STIR TOGETHER FLOUR, WHEAT GERM, SODA, CINNAMON, SALT AND NUTMEG; SET ASIDE IN LARGE BOWL, COMBINE APPLES, SUGARS, OIL, WALNUTS, EGGS AND VANILLA.
ADD FLOUR MIXTURE; STIR GENTLY WITH WOKEN SPOON TO BLEND WELL.
TURN INTO GREASE 13X9 IN BAKING PAN.
BAKE IN PREHEATED 350℉ (180℃) OVEN 50 MINUTES OF UNTIL CAKE PULLS AWAY FROM SIDES OF PAN.
COOL IN PAN ON RACK.
IF DESIRED, SPRINKLE WITH SIFTED CONFECTIONERS’ SUGAR.
CUT IN 12 BARS.
