Ground walnuts and processed cooked rice form a sturdy base, while sauteed onion, veggie bacon bits, and barbecue sauce bring the smoky, savory flavor you crave from a burger.
A rest in the fridge firms everything up so the patties fry beautifully without falling apart.
Stack them on a bun with extra barbecue sauce and crunchy pickles and you’ve got a meatless burger that earns its spot at the cookout.
Kitchen Tips
- Pulse the walnuts in the food processor until they’re finely ground but not a paste; you want some texture in the patty
- The hour in the fridge is essential; skip it and the patties will crumble in the pan
- Add flour gradually until the mixture holds together when you squeeze a handful; too much makes the burgers dense
- These freeze well before cooking, so make a double batch and stack between parchment paper for quick weeknight dinners
