Ingredients

2 packages asparagus spears frozen, 10 ounces
1 pound ham cooked, chopped
2 cups swiss cheese shredded
1/2 cup onion chopped
6 large eggs
2 cups milk
1 1/2 cups buttermilk baking mix
2 tablespoons vegetable flakes dried
1/4 teaspoon black pepper

Directions

In two greased 9 inch pie plates, layer the asparagus, ham, cheese, and onion.

In a bowl, beat eggs. Add remaining ingredients andmix well.

Divide in half and pour over asparagus mixture in each pie plate.

Bake at 375 for 30 minutes or until a knife inserted near the center comes out clean.

Kenyan-Style Collard Greens with Lemon

Being from the south where everyone from infants to adults eat collard greens, but not quiet like this. This was very different and a much healthier recipie from the collard grren cooked in smoked hamhocks. I like the dish and would cook it again. The lemon adds some real zest to this dish. Not as strong tasting as the southern recipies. Not as pungent in odor as other recipies.
