| 1 | tablespoon | vegetable oil | |
| 1 | tablespoon | garlic | minced |
| 1 | tablespoon | ginger | grated |
| 2 | stalks | lemongrass | fresh, peeled |
| 2 | cups | water | |
| 28 | ounces | chicken broth, low salt | fat-free |
| 1 | pound | chicken breast | tenders, cut into bite-sized pieces |
| 4 | ounces | angel hair pasta | uncooked |
| 1/4 | cup | cilantro | chopped fresh |
| 1 | tablespoon | lime juice | fresh |
| 1/2 | teaspoon | salt | |
| 2 | each | scallions, spring or green onions | thinly sliced |
| 1 | each | red chili pepper | finely chopped |
Heat oil in a large nonstick skillet over medium-high heat.
Add garlic, ginger, and lemongrass; sauté 3 minutes.
Add water and broth; bring to a boil.
Add chicken and pasta; cook 5 minutes or until chicken is done.
Remove from heat; stir in remaining ingredients.
Let stand 5 minutes. Discard lemongrass.

Made this for my wife and myself. Both found it very flavourful. Will be making this again maybe adding a portabello mushroom. Very nice recipe.
