| 1/2 | teaspoon | paprika | |
| 1 | tablespoon | cilantro | chopped |
| 1/2 | cup | onion | diced |
| 1 | each | garlic clove | crushed |
| 1 1/2 | cups | water | |
| 1/2 | cup | white wine | |
| 3 | each | tomatoes | diced |
| 1 | each | bouillion cube | |
| 1 | each | bay leaf | |
| 1/2 | teaspoon | oregano | |
| 1 | teaspoon | mixed vegetable seasoning | |
| 1/2 | teaspoon | basil | |
| 1 | cup | celery | |
| 1/2 | cup | almonds | |
| 3/4 | cup | rice, brown | short grain |
| 3/4 | cup | wild rice | |
| 2 | cups | green peas |
Heat oil and brown chicken in it for 10 minutes.
Add paprika, cilantro, onion and garlic.
Saute until onion is clear.
Stir in water, wine, tomatoes, bouillon cube, and seasonings; combine thoroughly.
Stir in celery, almonds and rice.
Cover and simmer 20 minutes; add peas and simmer another 10-20 minutes or until rice is ready.

This method worked great. It turned out exactly according to the directions. One of the guests had only had goose decades before and it wasn't a pleasant experience. He raved about this one though, not full of fat, just lovely dark rich meat. It went very well with a homemade cranberry sauce I also made.
