This bright, herb-forward casserole proves that vegetables don’t need heavy cream or cheese to feel satisfying.

Snap beans, brussels sprouts, and broccoli get a quick steam, then a silky pureed sauce made from walnuts, soy oil, fresh dill, sage, lemon juice, and a whisper of cayenne gets poured right over the top.

The walnut sauce brings richness and body while the herbs keep everything tasting fresh and alive. Serve it warm as a main course or chilled as a side that holds up beautifully at summer gatherings.

Chef Tips

  • Steam the vegetables just until crisp-tender. Overcooking kills the color and the crunch
  • Blend the sauce until completely smooth for the best texture
  • Add a splash more water to thin the sauce if it feels too thick
