Chewy no-bake apricot balls bright with orange zest and lemon juice, simmered briefly then chilled and rolled in granulated sugar. Tangy, jammy, and built from just four pantry staples.

These apricot balls live somewhere between candy and cookie, a chewy bite of concentrated apricot brightened with orange zest and a fresh hit of lemon juice. The mixture cooks down to a sticky, jammy paste that needs constant stirring because high-sugar fruit purées scorch in seconds, leaving a bitter tang in every batch.

After a long chill the cooled mass firms up enough to handle. Don’t shortcut the overnight rest; warm apricot paste sticks to everything and refuses to hold a sphere. The final roll in granulated sugar gives a faint crunch and a glittery finish that keeps the balls from clinging in storage. They keep well in a tin between sheets of parchment, making them a smart make-ahead treat for the holidays or a tea tray.

Kitchen Tips

  • Grind the dried apricots fine in a food processor; chunky bits don’t break down further during the short stovetop cook.
  • Stir continuously over medium-low heat. The sugar caramelizes and burns the moment you walk away from the pot.
  • Wet your hands lightly when shaping to keep the sticky paste from gluing to your fingers.
  • Store between layers of parchment in an airtight tin; they hold for about two weeks at room temperature.

Variations

  • Swap dried cranberries for half the apricots and add a strip of orange peel for a Christmas-leaning version.
  • Roll in toasted shredded coconut or finely chopped pistachios instead of plain sugar for a richer finish.
