These soft, cake-like bars start by simmering dried apricots and raisins in water until they’re plump and the liquid has absorbed.

The fruit gets stirred into a simple batter with crushed pineapple and optional nuts, creating bars that are more like a fruit-forward blondie than a cookie.

Cut them warm and finish with a shower of powdered sugar, or let them cool completely and spread with your favorite frosting.

Directions

Cook apricots and raisins over low heat in water until water is absorbed.

Cool slightly and add remaining ingredients except powdered sugar or frosting.

Blend well and spread in a greased 9 inch pan.

Bake at 350℉ (180℃). for 35 to 40 minutes.

Cut into bars while warm and sprinkle with powdered sugar or spread with frosting.

Blend well.

Spread on bars.
