| 1/2 | cup | brown sugar | packed |
| 1/2 | teaspoon | baking powder | |
| 1/4 | teaspoon | baking soda | |
| 1/4 | teaspoon | cardamom seeds | ground, or 1/8 tsp ground cloves |
| 1/2 | cup | apricot nectar | or orange juice |
| 1/4 | cup | apple sauce | unsweetened |
| 2 | tablespoons | vegetable oil | |
| 1 | each | egg | slightly beaten |
| 1/2 | cup | apricots, dried | finely snipped, dried |
| Apricot icing | |||
| 1/2 | cup | powdered sugar | |
| 2-3 | teaspoons | apricot nectar | or orange juice |
COOKIE BAR: In a medium mixing bowl stir together flour, brown sugar, baking powder, baking soda, and cardamom or cloves; set aside.
Stir together apricot nectar or orange juice, applesauce, oil, and egg till combined.
Sit in the snipped apricots.
Spread batter in an ungreased 11 inch by 7 inch by 1-1/2 inch baking pan.
Bake in a 350 degree F oven about 25 minutes or until a wooden pick inserted near the center comes out clean.
Cool in pan on a wire rack.
Drizzle with Apricot Icing.
Cut into bars.
APRICOT ICING: In a small mixing bowl stir together 1/2 cup powdered sugar and 2 to 3 teaspoons apricot nectar or orange juice.

last dinner, we made this spicy green salad with soy and roasted garlic dressing, it was so great, though it took about 40 minutes to roast garlic, it was worthy, the roasted garlic was just perfect, and we love this dressing, very tasty, it really added more flavour to our green salad. 5 stars for sure.
