| 2 | cups | flour, unbleached all-purpose | |
| 3/4 | cup | brown sugar | firmly packed |
| 1 | tablespoon | baking powder | |
| 1 | teaspoon | herbal salt | optional |
| 1/2 | teaspoon | baking soda | |
| 1/2 | teaspoon | cinnamon | |
| 1/2 | teaspoon | nutmeg | |
| 1 | cup | nuts | chopped |
| 1 | each | egg | beaten |
| 1 | cup | applesauce | |
| 1 | teaspoon | mint | dried, or 1/4 c chopped fresh mint |
| 1/4 | cup | vegetable oil |
Mix the dry ingredients and nuts together in a mixing bowl.
Combine the egg, applesauce, mint, and oil; add to the dry ingredients and stir until just blended.
Pour the batter into a greased loaf pan and bake in a 350 oven for about 50 minutes.
Cool on a rack.
When the bread is completely cool, wrap in plastic or foil.

When I checked out the Turkry Revenge Soup recipe I thought one of my family had sent you MY recipe!! The kids have always loved this soup and say it tastes better than the turkey dinner itself. You can't go wrong and if there are any leftovers, it freezes well. H. Yarema
