These cupcakes sit somewhere between a muffin and a dessert. There’s only a quarter cup of sugar in the whole batch, which makes them lightly sweet rather than the full-sugar treat you’d find at a bakery. What carries the flavor instead is unsweetened applesauce and a surprisingly generous hand with the nutmeg: one and a half teaspoons, which is more than most recipes dare.

That nutmeg is the defining note. It’s warm and slightly musky in a way that reads as autumn in every bite. The cinnamon provides the familiar spice backbone. Chopped walnuts add crunch and a little richness without overwhelming the delicate, tender crumb.

The alternating method, dry ingredients in with the applesauce in stages rather than all at once, keeps the crumb even and prevents the batter from over-developing. Directions

Preheat oven to 375℉ (190℃). Cream margarine until fluffy. Beat eggs and sugar; add to margarine and blend.

Sift together dry ingredients. Add to margarine mixture alternately with applesauce, mixing well after each addition. Stir in vanilla and nuts.

Spoon into 12 cupcake pans sprayed with vegetable pan spray or use paper baking cups. Bake 15 to 20 min.
