50 minThis jelly roll swaps jam for a creamy applesauce filling studded with toasted walnuts.
The sponge stays tender thanks to separately beaten egg whites while warm spices flavor every bite.
Rolling it up creates a beautiful spiral that slices into picture-perfect rounds.
Chef Tips
- Roll the warm cake immediately in a sugared towel to set the shape
- Let the rolled cake cool completely before unrolling to prevent cracking
- Fold applesauce into whipped cream gently to maintain volume
- Chill the filled cake for at least an hour before slicing for clean cuts
