Just butter, brown sugar, applesauce, flour, raisins, and a tight three-spice combination of cinnamon, cloves, and nutmeg.

The trick that makes the cake rise without eggs is dissolving the baking soda directly into the applesauce. The acid in the sauce activates the soda immediately, releasing carbon dioxide that gets trapped in the batter as the flour comes together. Work quickly once the soda hits the applesauce; let it sit too long and the lift fades before it reaches the oven.

Directions

Mix butter, sugar, salt and spices. Add flour and applesauce in which soda has been dissolved. Add the raisins.

Pour into an oblong, well-greased pan and bake at 350℉ (180℃) about 35 minutes.
