| 1/2 | cup | vegetable oil | |
| 1/4 | cup | apple juice | |
| 1 | teaspoon | vanilla extract | |
| 1 | cup | sugar | |
| 1/2 | teaspoon | salt | |
| 1/2 | teaspoon | baking soda | |
| 1/2 | teaspoon | cinnamon | |
| 1 1/2 | cups | apples | peeled and sliced |
| 1 3/4 | cups | chocolate chips (semi-sweet) | mini |
| 1/2 | cup | pecans | chopped |
| 1 | x | powdered sugar |
In mixing bowl, beat eggs slightly; add oil, apple juice and vanilla.
In separate bowl, combine flour, sugar, salt, baking soda and cinnamon; stir into egg mixture until well blended.
Fold in apples, chocolate chips and pecans. Pour into greased and floured 9 inch square baking pan.
Bake at 350 F for 40 to 45 minutes or until cake starts to pull away from sides of pan. Cool.
Sprinkle with confectioners sugar or serve with dollop of whipped cream if desired.
