This apple sausage cheddar quiche ditches the traditional pastry crust for something way easier: torn French bread.

Day-old bread pieces line a quiche dish, then you layer on sliced sausage and chopped tart apples before pouring over a custard made with eggs, milk, sharp cheddar, and Swiss cheese.

It bakes up into something between a strata and a quiche, hearty enough for dinner and elegant enough for brunch.

Kitchen Tips

  • Use day-old French bread so it’s dry enough to soak up the custard without getting soggy
  • Brown the sausage completely before adding to remove excess fat
  • Let it cool for 10 minutes after baking so the custard sets and you get clean slices instead of a runny mess

Directions

Tear French bread into 1-inch pieces.

Cover the bottom of an ungreased quiche dish with bread pieces.

Add the sliced sausage and apple.

In a medium bowl, whisk the eggs and milk together and pour over the bread mixture.

Bake at 350? F for 40 minutes. Cool 10 minutes before slicing.

Makes 6 servings.
