Apple Ricotta Pie

Ingredients

3/4 cup grape nuts cereal
2 large apples peeled, cored, chopped
1 teaspoon lemon zest grated
1 teaspoon lemon juice
1/2 teaspoon cinnamon
1 1/2 cups ricotta cheese
1/3 cup sugar
1 each egg white
1 each egg beaten
1 cup yogurt, plain

Directions

Sprinkle the cereal on the bottom of a greased 8 inch springform cake pan.

Arrange the apple slices over the cereal and sprinkle them with the lemon rind, lemon juice and cinnamon.

Combine the ricotta, sugar, egg white and whole egg and yogurt in a medium bowl, mixing with a spoon until smooth.

Pour evenly over the apples.

Bake in a preheated 350 degrees F. oven for 45 minutes.

When cool, go around the circumference of the pan with a knife before removing the side.

Spicy Stuffed Peppers

I have eaten a great deal of stuffed peppers in my life and these are the best. Who would have guessed walnuts, green olives, raisins...? There are some strange things in there but what a great taste they made. I added a can of diced tomatoes and a cup of salsa. I like mine more moist. After eating them I felt the walnuts although nutritious were hard to find. I wonder how some water chestnuts would be? My hat is off to whoever developed this recipe. Thank you!
