Apple Pudding Cake with Self-Making Sauce

Ingredients

2 large apples, mcintosh cored, sliced
1 1/2 teaspoons lemon juice
5 tablespoons honey or equivalent sugar substitute
1/2 teaspoon cinnamon
1 pinch nutmeg optional
1 pinch allspice optional
1 cup flour, all-purpose
1 large egg
3 tablespoons brown sugar
2/3 cup water cold
1 cup water boiling

Directions

Arrange the apple slices neatly in rows of concentric circles in a square or round 9-inch nonstick cake pan which has been sprayed with cooking spray.

Sprinkle lightly with lemon juice, sweetener, and spices.

Combine the flour, egg, brown sugar, and cold water; beat smooth.

Spoon the batter over the apples.

Sprinkle the top of the batter lightly with additional spices.

Pour the boiling water in a thin stream over the batter.

Bake uncovered, in a preheated 375F, for 30 minutes.

To serve: Cut into squares or wedges; invert each serving on a dessert plate.

Spoon on some of the apple pudding sauce that forms in the bottom of the pan.

Refrigerate leftover cake and serve chilled; the sauce will form a pudding-like glaze.

Baked Liver with Apples

So simple and delicious! I used calves liver and, to make it a bit healthier, I cut the salt back to a sprinkle and trimmed some of the fat off the bacon. I forgot to add the water, but it still turned out moist and tender. Delicious (if you like liver!).
