This apple potato salad is a revelation if you’ve never tried fruit in your potato salad before.

New potatoes get boiled until just tender, then tossed while still warm with chopped Delicious apples and finely diced celery.

A fat-free dressing and optional dill tie it all together, and the whole thing chills for hours so the flavors meld.

Pro Tips

  • Cool the potatoes quickly in ice water after boiling so they stop cooking and stay firm
  • Sprinkle the apples with lemon juice until you’re ready to mix so they don’t turn brown
  • Chill for at least 3 hours; this salad actually tastes better the next day as everything marries together

Directions

Slice the potatoes into bitesize pieces and boil until tender, but not soft. Peel the apple and slice into bitesize pieces (sprinkle with lemon juice until ready to use). Chop the celery finely. Cool the potatoes by draining and placing in pan of ice water. Combine all ingredients and mix with dressing and dill if desired.

Chill several hours.
