Apple Date Muffins

Ingredients

3/4cup whole wheat flour
1cup flour, all-purpose
1cup wheat bran
1teaspoon baking powder
1teaspoon baking soda
1teaspoon cinnamon
1/3cup dates chopped
1each egg lightly beaten
1/4cup brown sugar packed
2tablespoons vegetable oil
1cup milk, low-fat
1cup apple peeled, grated

Directions

In a large bowl combine the whole wheat and all purpose flours, bran, baking powder, baking soda and cinnamon.

Stir in the dates.

In another bowl, beat the egg with sugar and oil until well mixed, then stir in the milk and apple.

Pour into the flour mixture and stir just enough to moisten, being careful not to overmix.

Spoon into nonstick or paper-lined medium muffin tins, filling almost to the top.

Bake at 375 degrees (F) for about 20 minutes, or until firm to the touch.

Sun-dried Tomato, mushrooms and Parmesan Puff Pockets

Yum, these puff pockets are very delicious, I made my own olive-oil sun-dried tomatoes, very tasty, and the pockets turned out golden brown, mushroom, Parmesan cheese and oil sun-dried tomatoes went very well together. Definitely a good recipe once we have company.
