An apple cake that’s more fruit than batter. Six medium apples cut into eighths get folded into a simple oil-based batter with a full tablespoon of cinnamon and chopped almonds. Every slice is packed with tender apple pieces surrounded by a moist, spiced crumb.

Oil instead of butter keeps this cake incredibly moist. Where butter solidifies as the cake cools and can make the crumb feel dry the next day, oil stays liquid and keeps things tender. Directions

Peel apples, core and cut into eights.

  1. Combine eggs, sugar and oil; mix well.

  2. Combine flour, cinnamon, baking soda and salt; add to egg 3. Stir in apples and nuts.

  3. Spread in greased 8-inch square pan. Bake at 325℉ (160℃). 75 to 80 minutes or until wooden pick inserted near the center comes out clean.

  4. Serve warm with whipped cream or vanilla ice cream.
