90 minSharp aged cheddar in a sweet quick bread sounds like a gamble, but the tang cuts through the sugar and makes each slice more interesting than a standard apple loaf.
The key is using genuinely sharp, aged cheddar: a mild cheddar disappears into the batter. A properly sharp one gives you distinct pockets of savory flavor woven through the apple and walnut crumb.
Stir the dry ingredients gently into the apple mixture; the directions are specific about this. Over-working quick bread batter builds gluten and tightens the crumb. The goal is a tender, moist loaf that holds together when sliced.
Excellent for brunch, served warm or at room temperature.
