Apple Cheddar Quiche

Ingredients

1 tablespoon onion chopped
6 tablespoons butter or margarine
1 1/4 cups stone-ground wheat crackers
1/4 cup walnuts finely chopped
2 each apples, tart large, peeled, cored, sliced, (2 c.)
3 large eggs
1 cup cottage cheese cream-style
1 cup cheddar cheese shredded
1/4 cup milk
1 x nutmeg ground

Directions

Cook onion in butter or margarine until tender.

Stir in crushed crackers and nuts.

Press mixture into a 9 inch pie plate forming a crust.

Bake in 350 degree oven 8 to 10 minutes.

Meanwhile, simmer apples in a small amount of water 3 to 5 minutes or until tender.

Drain; arrange apples in crust.

In blender container or food processor bowl blend the eggs, cheese, milk, 1/2 teaspoon salt, and dash pepper until smooth.

Pour into crust. Sprinkle nutmeg on top.

Bake in a 325 degree oven about 45 minutes or until knife inserted off-center comes out clean.

Let stand 10 minutes.
