90 minThis quiche takes a non-traditional route with its press-in crust made from crushed stone-ground wheat crackers and walnuts. It bakes up crisp and nutty, a perfect contrast to the creamy filling.
Granny Smith apples get a brief simmer until tender, then layer into the crust before you pour in the blended cheese mixture. The blender does all the work here, whipping cottage cheese, cheddar, eggs, and milk into a silky custard.
A sprinkle of nutmeg on top adds warmth without overwhelming the delicate apple flavor.
Pro Tips
- Simmer apple slices just until tender, 3-5 minutes
- Blend the filling completely smooth for best texture
- Test doneness with a knife inserted off-center, not in the middle
- Let stand 10 minutes before slicing for clean cuts
