These tender apple spice muffins pack warm autumn flavors into every bite without the guilt.

Shredded fresh apples, plump raisins, and hearty rolled oats mingle with cinnamon, nutmeg, and a whisper of cloves for that classic spice cake vibe. Applesauce and skim milk keep them moist while cutting the fat.

The egg white adds lift without heaviness, so you get fluffy, tender crumb that’s light enough for breakfast but satisfying enough for an afternoon snack.

Pro Tips

  • Use room temperature milk and applesauce for better batter consistency
  • Don’t overmix once you combine wet and dry ingredients (lumps are okay)
  • An ice cream scoop ensures evenly sized muffins that bake uniformly
  • Check for doneness at 20 minutes; oven temps vary
