Apple shoofly pie takes the classic Pennsylvania Dutch molasses pie and adds chopped apples for extra sweetness and texture.

You make a spiced crumb mixture, then dissolve molasses in boiling water with baking soda (it’ll foam up impressively).

Most of the crumbs get stirred into the molasses along with chopped apples, and everything goes in a pie shell with the remaining crumbs sprinkled on top.

Pro Tips

  • Process the butter, flour, brown sugar, and spices until it resembles coarse meal for the right crumb texture
  • The baking soda will make the molasses foam dramatically; use a large bowl so it doesn’t overflow
  • Bake until the filling is set but still slightly jiggly in the center; it will firm up as it cools

Directions

To prepare crumb mixture: Process butter, flour, brown sugar, mixture resembles coarse meal.

To make filling: Dissolve molasses in boiling water in a large bowl.

Stir in baking soda. Add about ⅔ of the crumb mixture and all of the chopped apples, and mix until crumbs are moistened.

Spoon into pie shell.

Sprinkle remaining crumb mixture on top.
