5 minFour ingredients in a blender: cold apple cider, vanilla ice cream, ripe bananas, and a half teaspoon of cinnamon. That’s it. Sixty seconds of blending later, you have a thick, creamy shake that tastes like autumn decided to show up in a glass.
The banana does the work here that you’d usually need more ice cream to accomplish. Ripe banana blends into a silky, almost pudding-like base that gives the shake body and natural sweetness without thinning it out. The cider brings apple flavor that’s more complex than juice, with that slight fermented depth that pressed cider has.
The cinnamon is the detail that makes this taste intentional rather than improvised. Half a teaspoon is enough to run through every sip without taking over.
Five minutes from craving to drinking.
Kitchen Tips
- Use ripe, spotty bananas. Underripe bananas are starchy and don’t blend as smoothly or taste as sweet.
- Cold cider is important. Warm cider makes the ice cream melt too fast and you end up with a thin drink instead of a thick shake.
- Blend on high for at least 45 seconds so the banana breaks down completely and there are no fibrous chunks.
- For a thicker shake, freeze the bananas first. Peel, slice, freeze, and blend straight from frozen.
Variations
- Spiked version: Add 2 tablespoons of bourbon or dark rum for an adults-only apple cider shake.
- Spice it up: Add a pinch of nutmeg and cardamom alongside the cinnamon for a more complex fall spice profile.
