Apple-raisin soup is one of those European classics that feels both comforting and elegant at the same time.

Cubed apples and raisins simmer with cinnamon sticks in apple juice until everything is tender and the flavors meld together.

Stir in brown sugar and a splash of brandy, then chill the whole thing until ice-cold for a refreshing start to a meal or a light dessert.

Pro Tips

  • Remove the cinnamon sticks before serving so no one accidentally gets a mouthful of bark
  • Chill the soup thoroughly; it tastes best when served very cold
  • Use apple cider instead of juice for deeper, more complex apple flavor
