Apple raisin quiche flips the savory quiche concept on its head and turns it into a stunning dessert.

Raisins go in the bottom of a pastry shell, then get covered with sliced apples and a luscious custard made from eggs, heavy cream, sugar, and cinnamon.

It bakes until the custard is nearly set, then needs to rest for 10 minutes so it firms up perfectly for slicing.

Chef Tips

  • Arrange the apple slices attractively over the raisins since they’ll show through the translucent custard
  • Whisk the custard ingredients thoroughly so the cinnamon distributes evenly without clumping
  • Let the quiche stand for 10 minutes after baking; cutting it too soon makes the custard weep and fall apart
