60 minThis apple-raisin crisp is what you bake when you want all the comfort of apple pie without rolling a single crust.
Plump raisins soaked in boiling water get mixed with sliced apples and sugar, then the whole thing gets blanketed with a buttery oat topping studded with chopped pecans.
Bake until the apples are tender and the topping turns golden and crispy.
Kitchen Tips
- Soak the raisins for 5 minutes in boiling water so they plump up and stay moist during baking
- Cut the butter into the oat mixture until it resembles coarse crumbs for the crunchiest topping
- Serve warm from the oven when the contrast between tender fruit and crispy topping is at its peak
Ingredients
Directions
In a small mixing bowl pour enough boiling water over the raisins to cover them. Let stand for 5 minutes, then drain raisins.
For topping, in a medium mixing bowl stir together rolled oats, brown sugar, flour, and cinnamon. Using a pastry blender, cut in margarine of butter until mixture resembles coarse crumbs. Stir in chopped pecans. Set topping aside.
For filling, in large mixing bowl combine drained raisins, sliced apples, and sugar, then gently toss until combined. Transfer the filling to an ungreased 9” X 9” X 2” baking pan.
Sprinkle the topping on the filling. Bake in a 375℉ (190℃) oven for 30 to 35 minutes or until the apples are tender and topping is golden. Serve warm. Makes 6 servings.
