Impressive apple pie with cinnamon crust, sour cream filling, and crunchy walnut-brown sugar topping. Three distinct layers of flavor and texture.

The crust itself is sweetened and spiced with cinnamon. McIntosh apples get bound in a custardy sour cream filling spiked with vanilla. Then everything gets crowned with a streusel topping loaded with walnuts, brown sugar, and more cinnamon that bakes into a crunchy cap.
The result is complex, rich, and completely different from standard apple pie.
Pro Tips
- McIntosh apples break down into tender, saucy filling rather than holding their shape
- Two-temperature baking (450° then 350°F) sets the crust before filling overcooks
- Reserve crumb topping layer to sprinkle between apple layers, not just on top
- Cool completely before slicing so sour cream filling sets properly
