| 1 | cup | flour, all-purpose | |
| 2 | tablespoons | brown sugar | |
| 2 | teaspoons | baking powder | |
| 1/2 | teaspoon | salt | |
| 1/2 | teaspoon | cinnamon | |
| 3/4 | cup | milk | plus 2 tablespoons |
| 2 | large | eggs | separated |
| 1 | teaspoon | vanilla extract | |
| 1/2 | cup | apples | peeled, chopped fine |
| 1/2 | cup | pecans | chopped |
| 1 | each | apple spice syrup |
In a bowl, combine flour, brown sugar, baking pwoder, salt and cinnamon.
Stir in milk, egg yolks, and vanilla.
Add apple and pecans. Beat egg whites until stiff peaks form; fold into batter.
Pour batter by 1/4 cupfuls onto a hot greased griddle or skillet.
Turn when bubbles begin to form and the edges are golden.
Cook until the second side is golden. Serve with Apple Spice Syrup.

Tried this little gem last night and got rave reviews. Was a little watery so next time will use crushed tomatoes rather than diced. Also, used chipolte sauce(hot) that I purchased in Mexico rather than tobasco. Gave nice flavor.
