Fresh diced apple folded into an oatmeal bar batter gives these chewies pockets of sweet, tender fruit that you don’t get from dried apple or applesauce. Golden Delicious holds its shape during baking without turning mushy, and its mild sweetness blends right into the brown sugar and cinnamon base.

The batter is a one-bowl operation. Flour, both sugars, softened butter, cinnamon, vanilla, baking soda, and eggs all get beaten together, then quick-cooking oats, walnuts, and diced apple get folded in by hand. Spreading it into a greased 13×9 pan and baking for 35 minutes produces a sheet of chewy, golden bars that hold together when cut.

Quick-cooking oats are the right call here. They absorb moisture from the apple as the bars bake, giving you a chewy, dense texture rather than the cakey crumb you’d get with regular rolled oats. The walnuts add crunch throughout.

Kitchen Tips

  • Pack the brown sugar firmly when measuring. Loosely packed brown sugar means less moisture and less chew
  • Peel and dice the apple right before folding it in. Browning won’t hurt the flavor, but fresh-cut fruit releases less water into the batter
  • Let the bars cool completely in the pan before cutting. Warm bars tear and crumble at the edges
  • Store in a tightly sealed container at room temperature. They stay soft for 3-4 days

Variations

  • Use Granny Smith apples instead of Golden Delicious for a tarter, more assertive apple flavor
  • Swap walnuts for pecans and add a drizzle of caramel over the cooled bars for a caramel apple twist
  • Fold in a handful of butterscotch chips alongside the oats for extra sweetness

Directions

Preheat oven to 350℉ (180℃). Grease 13×9 inch baking pan.

Into large bowl, measure first 8 ingredients and ½ teaspoon salt.

With mixer at low speed, beat ingredients until well blended, occasionally scraping bowl with rubber spatula.

Fold in oats, walnuts and apple. Spread dough evenly in pan.

Bake 35 minutes or until toothpick inserted in center comes out Cool in pan on wire rack. Cut lengthwise into 4 strips, then cut each strip crosswise into 5 pieces. Store bars in tightly covered container.
